What is Summer without Ice Cream?
With a heat wave hitting Washington, the ice cream business is booming. With such hot temperatures everyone is reaching for cold treats. We have the cutest little neighborhood ice cream shop just a couple blocks from our house, and these evenings Kevin has been as itching to walk to The Scoop and get his ice cream fix. In an effort to scratch this itch, I made this rich and creamy coconut and berry paleo ice cream. This treat is smooth and indulgent, and with only 3 ingredients and no added sugar it trumps traditional ice cream.
Coconut Milk > Cow’s Milk
Cow’s milk is a substance that is created by hormones, and therefore naturally contains some residual hormones from the cows that make it. Because of that, dairy is a hormonally active food in our bodies. This can cause hormonal disturbances, particularly for women, which can potentially cause hormonal acne or weight gain. People who are particularly sensitive to hormonal changes [like me] may benefit from avoiding large amounts of dairy. Cow’s milk can also cause disruptions in healthy gut flora because it creates an acidic environment in the GI tract, and contains sugars that can feed unhealthy bacteria.
Coconut milk is a fantastic alternative because it is a healthy source of medium chain triglycerides, which are easier to digest than other types of fats, and are conducive for healthy hormonal regulation. Additionally, coconut milk supports a healthy microbiome by reducing gut inflammation and reducing unhealthy bacterial overgrowth due to it’s antimicrobial properties.
Coconut and Berry Paleo Ice Cream
This simple, 3-ingredient dessert is the perfect sweet and creamy dessert for hot summer nights.
- 1 can coconut milk
- 3 cups mixed berries frozen
- 1/4 tsp pure powdered stevia optional
Put all ingredients in a blender. Blend, scrap the edges and then continue to blend until smooth.
Serve immediately, or pour into a shallow container and spread evenly with a spatula. Cover and freeze. Thaw for 5-10 minutes before serving if frozen for >20 minutes. Scoop with an ice cream scoop.
Top with berries, chocolate chips or coconut.
For best quality, consume on the day ice cream was prepared. Longer freezing may require longer thawing time.
