Turkey Pesto Mozzarella Cucumber Roll
These cucumber rolls are a simple appetizer, or packable grain-free lunch option suitable for both kids and adults.

Ingredients

cucumber
5
slices
nitrate-free deli turkey
10
mini
fresh mozzarella balls
¼
cup
pesto
Instructions
Using a veggie peeler, begin slicing the cucumber lengthwise.
Cut the deli meat in half, and spread with pesto. Place at one end of a cucumber slice, and place the mozzarella in the middle of the turkey.
Roll the cucumber starting at the end with the the turkey, pesto and cheese. Secure with a toothpick, and serve.
Notes
Feel free to use a large piece of fresh mozzarella cut into smaller chunks if you cannot find the mini mozzarella balls in your grocery store.
