Grain-Free Sweet Potato Pizza Bake

This is a super healthy and incredibly simple alternative to everyone's favorite... PIZZA.

Ingredients
Sweet Potato Mixture
  • 2 large sweet potatoes about 800g, or 4 heaped cups cubed
  • 1/4 cup almond flour
  • 1 egg
  • 1/2 tbsp garlic powder
  • 1 tsp dried basil
  • 1 tsp oregano
  • 1/4 tsp salt optional
  • 1 tsp black pepper coarse ground
  • 1 tbsp olive or avocado oil
Toppings
  • 1 cup cheese mozzarella or mozzarella plus Parmesan
  • 1 cup pizza sauce
  • toppings of choice
Instructions
  1. Begin by bringing a large pot of water to a boil. A stock pot will work best. 

  2. Preheat oven to 375 F.

  3. While water is heating, peal and cut the sweet potato into chunks. Add to water once water begins to boil. Cook for 20-25 minutes or until potatoes are easily pierced with a fork.

  4. Once potatoes are fully cooked, pour into colander and allow water to drain. Add potatoes to a large blender, along with egg, almond flour and spices. Blend fully, scraping sides, until mixture becomes smooth.

  5. Drizzle a cast iron skillet or casserole dish with olive oil. Spread sweet potato mixture evenly using a spatula. 

  6. Place in preheated oven for about 40 minutes. Once cooked, you should be able to pierce with a fork and it will come out clean.

  7. Spread on sauce and add toppings/cheese. Cook for another 10-20 minutes at 375 F.

  8. Remove, serve and rejoice!
