Once the buns are done, prepare the sausage. Form flat and wide patties with your hands that are a little larger than the mason jar lids.
Place patties in a pan over medium heat. No need to oil the pan. Allow the patties to brown completely on both sides. This should take about 3-4 minutes per side.
Remove the sausage from the pan. Clean the pan with the spatula removing any sausage pieces or burnt bits.
If the pan is getting really hot you may want to allow it to cool or switch pans at this time. Spray the pan with avocado oil and add the eggs. You can make a traditional fried egg or use a silicone ring to make a round egg. Allow the white to cook until the whites turn opaque then flip. Cook to your desired level of doneness.
Assemble the sandwich with the bun, egg and sausage. Slice or smash the avocado as add to the top before putting on the top bun.
Notes
The calories include two buns and 3 ounces of sausage per sandwich. For a lighter meal you could do 1 bun or a smaller amount of sausage. As written his is a pretty hearty sandwich. Adjust for your own dietary needs.
