Grate ¼ of a large English cucumber using a cheese or veggie grater. You should have about ¼ cup of grated cucumber before squeezing the moisture out.
Place the grated cucumber between several folded paper towels and squeeze out excess moisture over a bowl or sink. You may need to do this more than once. Once you feel like you can't squeeze any more moisture, add the cucumber to a mixing bowl.
Finely chop dill and peel and mince garlic. Add all the ingredients to the mixing bowl with the cucumber and stir together until everything is well incorporated. Taste the sauce and adjust the salt, dill, garlic, and/or vinegar to taste.
