These Flourless Almond Butter Cookies are to die for. They are rich, a perfect balance of chewiness & crispiness and SO decadent. Made with only 6 better-for-you ingredients, these are bound to be a new household staple. This recipe is paleo-friendly, dairy-free and gluten-free!
What is more classic than a chocolate chip cookie? Nothing really. They are the king of classics. They are nostalgia in every gooey, chewy, chocolate-y bite.
This recipe kicks the classic up a notch. These flourless cookies are made with wholesome, paleo-friendly ingredients and are naturally gluten-free.
Finding Paleo-Friendly Chocolate
Paleo-friendly chocolate is becoming more widely available. When selecting a chocolate you want to assess ingredient labels to ensure they are dairy-free, free of unwanted additives and sweetened with a paleo-friendly sweetener like coconut sugar or maple sugar.
Personally, I use Hu Kitchen Dark Chocolate Bars and chop 1 ½ bars into chunks. I like the using chocolate chunks because each cookie is unique, but chocolate chips would also work just fine! Hu Kitchen chocolate can be found at most big box retailers, like Walmart, health food stores and is available on Amazon or directly from their website. I have no affiliation with Hu, it's just darn good chocolate made from simple ingredients!
Recipe Variations
Lower Sugar
These cookies are sweet and decadent. If you prefer a less sweet cookie don't sweat it! Simply reduce the coconut sugar to ½ cup. This will slightly decrease the final volume of the dough but will still result in tasty cookies.
Another option if you are not strictly following a paleo diet is to substitute some stevia sweetened chocolate chips. I like Bake Believe Baking Chips!
Lighter Cookies
I love substituting granulated maple sugar in place of coconut sugar for another alternative to this flourless cookie recipe. Coconut sugar is darker and much more comparable to using 100% dark brown sugar. Maple sugar is more similar to a combo of granulated sugar and brown sugar used in most traditional chocolate chip cookie recipes. Definitely give it a try! Here is my fave maple sugar.
Ingredient Notes & Possible Substitutions
- Almond Butter - Most other nut butters will work fine in this recipe, but almond butter offers a consistent texture and a fairly neutral flavor making it the perfect nut butter for these cookies. Sunflower seed butter and macademia nut butter may have a little too high of fat content to create the correct consistency. Definitely look for unsweetened and unsalted when selecting an almond butter!
- Coconut Sugar - Any granulated sweetener should work fine in this recipe as long as it measures 1:1 with cane sugar. I chose coconut sugar because it is a widely available paleo-friendly granulated sweetener, however maple sugar (not syrup!) is my true love and can also be used.
- Egg - I haven't tested any vegan substitutions in this recipe, so if you try an egg alternative please let me know in the comments below!
- Chocolate - Use your favorite chocolate here! No need to select paleo-friendly chocolate if you do not follow a dairy-free or paleo diet. Any good quality chocolate will be perfect. You will need about 1.5 bars (chopped) or ½ cup of chocolate chips.
- Salt - I used seas salt, but you can use whatever salt you have on hand and salt to taste! ½ tsp might be a lot to people who don't favor the sea salt and dark chocolate combo!
How To Make Flourless Almond Butter Chocolate Chip Cookies
These flourless almond butter cookies are literally the easiest cookies to make. Here's how:
- Preheat the oven to 350 F.
- Line a baking sheet with parchment paper.
- Combine the almond butter, coconut sugar, egg, salt, and vanilla in a large mixing bowl. Mix together using a whisk until you have a nice, thick dough.
- Fold in the chocolate chips (or chopped chocolate) using a rubber spatula.
- Using a 1-ounce cookie scoop, scoop out the cookies and place them on the lined cookie sheet. The cookies will spread out a little so leave some space between them.
- Place the cookies in the oven and bake for 10-12 minutes. Look for a slight change in color and crispy edges to indicate doneness.
- Allow to cool for 5-10 minutes before enjoying to ensure they set properly.

Flourless Almond Butter Chocolate Chip Cookies
Equipment

Ingredients
- 1 cup Creamy almond butter Unsweetened & unsalted
- ⅔ cup Coconut sugar Or granulated maple sugar
- 1 Egg Large
- ½ tsp Sea salt Or to taste
- 1 tsp Pure vanilla extract
- ½ cup Paleo chocolate chips or chopped bars I used 1.5 Hu Kitchen Chocolate Bars
Instructions
- Preheat the oven to 350 F.
- Line a baking sheet with parchment paper.
- Combine the first 5 ingredients in a large mixing bowl. Mix together using a whisk until a dough begins to form. Mix until there are no lumps and the egg is fully incorporated.
- Fold in the chocolate using a rubber spatula. Make sure the chocolate is evenly distributed.
- With a 1-ounce cookie scoop, scoop out the cookies and place them on the cookie sheet leaving about 1.5 inches between cookies. The cookies will spread some. The dough should yield about 14 cookies.
- Place the cookies in the oven and bake for 10-12 minutes. If using coconut sugar the dough will be dark so it will be a littler harder to assess for browning but observe for slight color and texture changes around the edges to indicate doneness. Avoid over cooking!
- Allow to cool for 5-10 minutes before enjoying to give the cookies an opportunity to set properly.
